Starting school + a weekend away + packed weekends when here = minimal time to prep healthy meals. But thanks to my past self, I had plenty of supplemental freezer items to get us through this weekend. Lentil-Turkey Burgers and some leftover Hawaiian Lentils saved the day this week.
This week was a little bit of a mess when it came to meal planning and prepping. I'd planned on salmon, rice, & broccoli, tuna fish & avocado-yogurt sauce, steak, greens, and crash potatoes, and slow cooker pasta. The slow cooker sauce took 3.5 hours on high, rather than the planned 2ish hours which kind of threw everything off for the week. Instead of finishing it on Sunday, I didn't get a chance to finish it until Tuesday night because of my class on Monday night. Luckily we had a few more Lentil-Turkey Burgers in the freezer and some frozen Hawaiian Lentils for Monday meals, and our slow cooker pasta wasn't ready for meals until Thursday lunch! Sometimes the plan is just to figure it out as you go I guess.
Breakfast:
Mashed Banana Oatmeal + Blueberries
Eggs + breakfast potatoes
Eggs + brown rice, broccoli, avocado, salsa
Lunch/Dinner:
Hawaiian Lentil Sloppy Joes (from freezer)
Lentil-Turkey Burgers w/ Avocado-Yogurt Sauce (from freezer)
Salmon, Brown Rice, Broccoli Bowls (salmon from freezer)
Steak, Crash Hot Potatoes, Sauteed Rainbow Chard, Peppers, & Onions
Tuna Salad w/ Avocado-Yogurt Sauce
Slow Cooker Pasta + sausage, cheese (sausage from freezer)
Snacks: blueberries, lemon-almond-chia cookies, grapes, carrots + a little hummus, whole wheat cheese itz, string cheese, peanut butter & banana, leftover birthday rice krispies treats (from Zac's grandma!)

I'm definitely still loving the slow cooker, but I've realized that I don't really have enough slow cooker recipes. I've adapted a few, like bolognese and Hawaiian Lentils, but they weren't quite as good as their stovetop version. Now that fall is here, I think the good ol' Net will be flooded with more slow cooker recipes to help me out so that's good. I'm also super excited to make some of my favorite warm weather soups and stews as the weather FINALLY cools down! (Jalapeño Salsa Verde Soup I'm lookin' at you!)
