- 1 Tablespoon butter or oil
- 1 medium onion, sliced into thin wedges
- 1/2 bunch fresh kale (about 6–8 cups)
- pinch of salt
- In a large skillet or pan, melt the butter or warm the oil over medium heat. Add the onions and cook over low-medium heat, stirring occasionally, until soft and caramelized, about 45-60 minutes.
- Add a pinch of salt, 2 Tablespoons water, and the kale. Cover and cook for about 5 minutes. Stir well and serve.
