Snickerdoodle Date Bites

Description

Make these easy Snickerdoodle Date Bites for a festive snack or pre-workout!


Ingredients

Scale
  • 8 ounces Medjool (or other) dates (about 3/4 cup, 1012 dates)
  • 1 cup cashews
  • 1/2 cup almonds
  • 2 teaspoons ground cinnamon
  • pinch of nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla
  • 2 teaspoons water

Instructions

  1. Add all ingredients to food processor and blend until desired consistency is reached, stopping to scrape down sides as needed. I like mine more textured, so I blend and scrape until the dough sticks together, but while there are still chunks of nuts!
  2. Scoop into approximately 1 Tablespoon-sized chunks. I use a small ice cream scoop to get even sizes. Roll between your two palms until balls are formed and store in refrigerator or freezer.
