Place the ricotta cheese in a large bowl. Add the minced garlic and seasonings (salt, dried oregano, dried basil, red pepper flakes) and mix well. Stir in the red onion, ham, and pineapple. (Taste and adjust seasoning if desired - I like more red pepper flakes!)
Cut the dough into four equal pieces and roll each out into a large circle. Divide the filling among the four circles, place on half of the dough. Top each with mozzarella cheese (optional).
Press the filling down slightly and fold over the top of the dough. Press the edges together by rolling them slightly.
Place on parchment-lined baking sheet and bake on 400ºF for 8-12 minutes, or until top is slightly brown.
Notes
You can cut a slit in the top to let out the steam. This helps prevent the seams from bursting. I don't always do it though.
