Instructions
Preheat oven to 425ºF.
Rinse the cooked potatoes and chop into chunks. Place in a pot with a lid and shake vigorously. They will get kind of fuzzy on the outside – perfect! Toss with a little olive oil, salt, and pepper, and roast in the oven for about 35 minutes, or until crunchy.
Meanwhile, cut beets into cubes and leave the grapes whole. Mix together with 1 tablespoon olive oil, ½ tablespoon balsamic vinegar, and sprinkle with salt and pepper. Spread on a baking sheet and roast on 425ºF for about 25-40 minutes, or until the grape skins are ready to burst.
