I have tried many variations of easy chocolate puddings such as avocado or chia, and even a coconut milk mousse. While most of them are amazing, this tofu chocolate mousse has the exact pudding consistency I remember loving as a child.
Silken tofu has long been used to make sweet desserts across several Asian countries, including Chinese sweet tofu pudding called Dòuhuā and the Japanese tofu dessert called Blancmange.
Silken tofu is made the same way as other types of tofu, but it isn’t pressed or concentrated, resulting in a very soft and silky texture. Some brands will make different categories of silken tofu (including soft, firm, etc.) and the softest silken tofu is the best option here, though all silken tofu varieties should work.
Why You Will Love This Silken Tofu Mousse
- Just Two Ingredients! Yep, that's all that's required to make a super light and creamy chocolate with plenty of dark chocolate flavors.
- You Choose the Consistency. You can eat it immediately mixing or chill it so that it thickens up.
- Customizable. While this silken tofu dessert is enjoyable exactly as written there are actually lots of different ways you can jazz it up with different flavor variations or garnishes to turn it into a fancy dessert for a special occasion.
Ingredients
- Dark Chocolate: Use 70% cacao for a deep dark chocolate flavor and less sugar. Use a high-quality chocolate brand such as Lindt or Ghirardelli. This will not work with cheaper chocolate and I have not tried it with chocolate chips.
- Silken tofu: Make sure you are using silken tofu which is much smoother in consistency that other varieties.
- Sea salt: Just a pinch really enhances the flavor.
- Sweetener: It's optional but you can add honey for more sweetness.
- Cacao: Add a bit of powdered cacao for a richer more chocolatey flavor.
PRO TIP: I developed this dessert tofu recipe using European ingredients and brands, so the tofu package I found might not be the same as what’s available to you. The ratio I’m using is 100g chocolate (3.5 oz) to 300g tofu (10.5 oz), so you can scale things up based on the brand of silken tofu that’s available to you!
Variations
- Instant Espresso: Coffee also enhances the flavor of chocolate so feel free to add a small amount for a more intense mocha flavor.
- Experiment with Flavors: Extracts are a great way to add different flavors. Try it with some peppermint during the holidays, raspberry, coconut, or almond extract.
- Mix-Ins or Toppings: Sprinkle the top with or mix in some shredded coconut, chopped nuts, fresh raspberries, or chocolate chips.
How to Make Silken Tofu Chocolate Mousse
Step 1: Melt the chocolate. Break up the chocolate into small pieces, and place it in a heat-safe bowl. Microwave this in 20-second increments. Stop and stir after each one and repeat as needed until it's melted and mostly smooth.
Step 2: Add to the blender. Add the tofu with all the liquid, the melted chocolate, and a small pinch of salt to a blender.
Step 3: Blend and serve. Blend the tofu chocolate pudding mixture until it's completely smooth. Taste and adjust sweetness as you’d like. Serve the tofu mousse immediately, or chill in the fridge for 2 hours if you’d prefer a thicker consistency.
Expert Tips
- Serving: This chocolate mousse is the perfect end to a dinner party with friends, holidays, or simply just because. I've served it to guests along with cast iron chicken thighs or slow cooker pork chops.
- Garnish: Dust the top with some cocoa powder or powdered sugar and garnish with fresh berries and mint! If you're feeling like a splurge, add some whipped cream.
- Consistency: You can enjoy your mousse right away or refrigerate it for at least 2 hours to allow it to thicken into a more mousse-like consistency.
- Pour it into glasses or dishes: If serving in individual portions, go ahead and pour it into glasses right after blending. It will set up nicely, especially when serving for a special occasion.
- Store: Transfer any leftovers to an airtight container and store in the fridge for up to three days.
Recipe FAQs
I don't recommend freezing it as the consistency of tofu changes when frozen and you may find it a bit grainy after freezing.
I have tested this chocolate tofu mousse with a few different methods and this combination is the most crowd-friendly. If you like a dark chocolate, you can certainly use up to 85% dark chocolate, but you will most likely need to add 1-2 teaspoons of honey. If you use a lower percentage of cacao, the flavor will likely be sweeter and you may not even need the honey.
It can be both a pudding or a mousse. Immediately after blending, the texture of the mixture is pudding, and it will remain like pudding up to 30-60 minutes in the fridge. However, once it has chilled completely (90-120 minutes), the pudding sets and has the texture of a chocolate mousse. Both textures are delicious! If you’re hoping to use this as a pudding or in a chocolate pudding pie, you will most likely need to keep this at room temperature until serving time.
