Homemade salad dressings are one of my favorite hacks. Sure, it's easy to buy a bottle of dressing that can sit in your fridge for months, but the flavor absolutely pales in comparison to homemade versions! Look, I'm not against the occasional store bought dressing, but homemade versions are so simple, delicious, and definitely free of additives.

Ingredients
- Extra virgin olive oil: Use a high-quality olive oil - this has a more balanced flavor and additional health benefits.
- Balsamic vinegar: This tangy & slightly sweet vinegar pairs perfectly with the mustard.
- Whole grain mustard: This mustard has a nice strong flavor, but you can use Dijon mustard for a similar flavor but without the texture. Mustard also acts as a natural emulsifier, keeping the dressing from separating.
- Honey: it's completely optional, but it makes the dressing slightly sweeter.

Variations
- Herbs: If you want a bit more flavor, you can add a pinch or two of Italian seasoning, thyme, rosemary, or marjoram.
- Spicy bite: Use a spicy mustard or add a small pinch of red pepper flakes for a bit more bite.
How to Make Mustard Balsamic Vinaigrette
This simple homemade dressing comes together in a flash. It takes just one step and it's ready to enjoy right away or you can store it for later.
Step 1: Combine all the ingredients in a bowl or jar, and whisk them together, or shake vigorously until the ingredients are emulsified. That's it! Serve immediately or store in a sealed container in the fridge.
Expert Tips
- Storing the Dressing. Store it in a sealed jar or container and keep it in the fridge for up to 2 weeks. Balsamic and olive oil dressing will last 4 weeks, but adding mustard (and honey) cuts that time in half, so be sure to use this within 2 weeks.
- More Than a Dressing. Of course, it's great on your favorite salads, like my Harvest salad, but it works great as a marinade for chicken or pork, or a sauce for roasted carrots or parsnips.

Ingredients
- 4 Tablespoons extra virgin olive oil
- 2 Tablespoons balsamic vinegar
- 3 teaspoons whole grain mustard
- ⅛ teaspoon salt
- ½ teaspoon honey optional, if desired
Instructions
- Combine all ingredients in a bowl or jar and whisk or shake vigorously until emulsified. (Because of the mustard, a natural emulsifier, this dressing shouldn’t separate!)
